With a broad and enveloping aroma and medium fruitiness, decidedly spicy with a bitterish tendency, it has notes of almond, chicory and artichoke. Rich in chlorophyll and carotene, yellow-green in color and with low acidity. Ideal on salads, mature cheeses and dips.
